Okura Miso Soup

Ingredients

1 small tomato
1 pack okura (about 8 pieces)
3 cups (600ml) dashi soup stock
2 osaji miso paste

Steps

Put okura on cutting board, sprinkle some salt on them. Roll okura in salt. Wash the okura to get rid of the salt. Then put the okura on a clean cutting board, cut off the tips and peel around the top part. Cut each okura into half.
Cut tomato into 8 pieces.
Boil the soup stock, add okura and cook 3 minutes. After 2 minutes have passed, add tomato pieces. Don’t overcook.
Add miso to the soup and serve.
