Spanish Mackerel

Ingredients

4 spring potatoes
400g spanish mackerel (サワラ)
1/3 kosaji salt
2 osaji cooking sake
2 osaji olive oil
[A]
1 kosaji grated garlic
2 osaji soy sauce
1 osaji sugar

Steps

  1. Wash potatoes carefully without peeling them.
  2. Cut potatoes into 5mm rounds.
  3. Put potatoes in a bowl of water. Keep in water foor 5 seconds. Use strainer.
  4. Prepare small pieces of fish.
  5. Put fish in square glass bowl without overlapping. Sprinkle with salt on all sides. Spread out salt evenly. Wait 10 minutes. Wipe fish with paper towels.
  6. Put potatoes in flat round glass casserole without overlapping.
  7. Put fish on top of potatoes. Add sake and olive oil.
  8. Cover loosely “funwari” style with saran wrap.
  9. Cook in microwave on 600W foor 10 minutes.
  10. Check potatoes and fish to be sure that they have cooked enough. Cook some more if needed.
  11. Serve on 4 plates.
  12. Add A evenly over the dishes.
