Pickled Ginger

Ingredients

ginger
salt
2 tb rice vinegar
2 tb water
1 1/2 tsp sugar

Steps

  1. Peel ginger and cut into thin slices. Put the slices in a small bowl and sprinkle with salt. Rut it in so that all pieces are covered. Let sit for 30 minutes.
  2. Make the pickling liquid by putting the vinegar, water, and sugar in a microwavable bowl and mix gently. Microwave in 20 second bursts for 3 times.
  3. Place the ginger in a small pan of boiling water and simmer for 2 minutes. Drain the ginger and put in a container. Pour over the pickling liquid amd make sure the ginger is submerged under the liquid.
  4. Cover and refrigerate for at least 24 hours, but ideally 2 to 3 days.
