Carrot Cucumber Salad

Ingredients

1/4 cup rice wine vinegar
2 tb cilantro
1 tb sesame seed oil
1/4 tsp salt
1/8 tsp chili powder
1/2 tsp black pepper
1 1/2 cucumbers, chopped into thin rounds
1 carrot, peeled and cut into matchsticks
1/2 red onion, thinly sliced

Steps

In a large bowl, combine cucumbers, carrot pieces, onion, and cilantro. Combine the other ingredients separately in a small bowl. Pour over the vegetables. Store in container for 2-4 hours before serving.
