Hiyashi Chuka

Ingredients

4 chuka nama men
1 cucumber
70g ham (muenseki)
1 tomato
150g moyashi sprouts (no roots)
2 eggs + a little salt
(A) 4 osaji soy sauce
(A) 4 osaji vinegar
(A) 4 osaji sugar
(A) 4 osaji water
(A) 1/2 osaji sesame seed oil
20g thinly sliced pickled ginger, cut into thin strips

Steps

  1. Cut cucumber.
  2. Cut ham pieces in half, then cut into thin strips.
  3. Cut tomato into half, cut each half into 5mm thin slices.
  4. Wash sprouts, making sure they don’t become too watery. Spread on microwavable plate. Cover with saran wrap. Microwave for 2 1/2 minutes on 500W. Use strainer to discard excess water.
  5. Crack eggs into bowl. Add salt. Mix.
  6. Put oil into frying pan. Add 1/2 egg into pan. When one side is cooked, flip over. Then cook the other half. When it cools down, cut into 1/2, then into thin strips.
  7. Prepare (A).
  8. Boil water. Add noodles. Untangle them. Cook per package directions. Put noodles into strainer. Rinse under cold running water using hands. Make sure there is no excess water.
  9. Serve as follows:
    • noodles
    • cucumber
    • sprouts
    • ham
    • tomato
    • egg in the middle
  10. Pour one portion of sauce on each bowl.
  11. Top with ginger.
