Ingredients
2 cucumbers
2 avocados
2 tomatoes
1/3 cup black olives
mozzarella cheese balls (or feta cheese)
1 large lemon, zested and juiced
olive oil
salt and pepper

Steps
- For the dressing, combine in a bowl the lemon juice, lemon zest, 1/4 cup olive oil, salt & pepper.
- For the salad, prepare and combine the rest of the ingredients in a large bowl. Add salad dressing and serve.
