Ingredients
3 ears fresh corn
2 tablespoons olive oil
1 pack cherry tomatoes
1 avocado
2 tb red onion, minced
2 tb lime juice
1 tsp minced garlic (tubed)
1 tb chopped cilantro
salt & pepper
Steps
- Preheat grill to a medium high heat.
- Brush corn with olive oil and place on grill.
- Grill for about 10 minutes on each side or until tender crisp.
- Let cooked corn cool. Then using a sharp knife carefully stand the corn on end and run the knife down each side to remove the kernels.
- Cut cherry tomatoes and avocado into large chunks and add to the corn.
- Finely dice the red onion and add to the corn mixture.
- Add lime juice, garlic, and cilantro and gently toss to combine.
- Add salt and pepper to taste.
- You can drizzle with a little additional olive oil if desired.
