Ingredients
3 cucumbers, peeled
salt
1 cup plain yogurt
2 teaspoons lemon juice
2 cloves garlic, minced
ground black pepper
1 tablespoon fresh parsley, chopped
1/2 tablespoon extra-virgin olive oil
Steps
- Peel and slice cucumbers into rounds. Place in a bowl, sprinkle with salt, toss and set aside for at least 20 minutes.
- Combine yogurt, lemon juice, garlic, pepper, and parsley in a medium-sized bowl. Stir in the oil briskly.
- Drain the cucumbers, return them to the bowl, pour the yogurt mixture over and toss well.
