Ingredients
4 carrots, peeled
3 cloves garlic, finely chopped
2 tb extra virgin olive oil
3_4 cup finely grated parmesan cheese
salt
ground black pepper
2 tb fresh lemon juice
2 tb chopped fresh parsley
Steps
- Preheat oven to 210°C Cut carrots into large bite-sized pieces.
- Toss carrots with garlic, oil, 1/2 cup parmesan cheese, 1/2 tsp salt, and some pepper. Spread on a grilling pan in a single layer.
- Bake carrots until tender and carmelized in spots, 25 – 30 minutes.
- Transfer carrots to a platter. Toss with lemon juice. Sprinkle with parsley and remaining 1/4 cup parmesan cheese and toss just to combine.
