Tamago Yaki

This is a simple omelet that you just pour the egg mixture into a frying pan and sprinkle with green onions. It’s super easy because you don’t have to flip it over.

Ingredients

5 pieces small green onions (万能ねぎ)
20g dried small sardines (ちりめんじゃこ)
5 eggs
salt & pepper
1 osaji cooking sake
oil
vinegar
soy sauce

Steps

  1. Finely chop the green onion.
  2. Beat the eggs in a bowl with the salt, pepper, and cooking sake. Add the sardines and mix in.
  3. Heat 1/2 osaji oil in a frying pan. Add the egg mixture and stir lightly. When it is half-cooked, sprinkle the green onions on top. Cover and cook for 1-2 minutes over medium heat.
  4. Slide the omelet onto a service dish and cut into quarters. Serve topped with vinegar and soy sauce to taste.
