Ingredients
4 servings (640g) ゆでそば
2 blocks abura age
2 sticks chikuwa
2 bunches (269g) chingensai
4 nama shitake mushrooms
(A) 5 cups water
(A) 1 1/2 cup 3X strength mentsuyu
Steps
- Cut the abura age into half horizontally, and then cut each half into 4 triangles. Thinly slice the chikuwa diagonally. Cut off the root of the bok choy and cut it into half lengthwise. Remove the stems of the shitake mushrooms and cut them in half.
- Put the ingredients for the soup in a pot and heat it. When it is hot, add the soba noodles, loosen them up with chopsticks, mix, and bring it to a boil. Place the soba noodles in bowls.
- Put the abura age, chikuwa, bok choy, and the shitake mushrooms in a pot and boil for about 5 minutes. Place on top of the ingredients from (2) above, and pour the sauce over it.
