Abura Age Soba

Ingredients

2 servings soba noodles
1 piece abura age fried tofu
(A) 80cc water
(A) 1 osaji soy sauce
(A) 2 osaji mirin
small green onions
kamaboko
(B) 400cc water
(B) 2 osaji 2X concentrated mentsuyu
(B) 1 kosaji hondashi
(B) 1 kosaji mirin
(B) 1/2 kosaji soy sauce

Steps

  1. Chop the green onions.
  2. Slice the kamaboko
  3. Cut the fried tofu in half and cut it diagonally.
  4. Add (A) to a pot and bring to a boil, then simmer the fried tofu for 2 minutes on each side. Turn off the heat and leave to soak up all the juices.
  5. Boil the soba noodles according to the directions, drain the water, and put in serving bowls.
  6. Add (B) both to a pot and bring to a boil.
  7. Pour (B) into the serving bowls with the soba noodles. Garnish with the green onions kamaboko, and prepared fried tofu.
  8. Serve.
