New Years Chicken Soba

Serves 3 people

Ingredients

3 packs fresh soba noodles
225g chicken breast
1 1/2 naga negi long onion
2 osaji katakuriko potato starch
Sesame seed oil
(A) 2 osaji shiro dashi white soup stock
(A) 5 osaji soy sauce
(A) 1 osaji hondashi soup stock
(A) 1 osaji sugar
(A) 3 osaji mirin

Steps

  1. Chop white parts of green onion into thin rounds.
  2. Cut chicken breast into thin slices. Coat with the potato startch.
  3. Prepare (A) in blue pot. Get large silver pot ready by adding enough water to boil the soba noodles.
  4. Add sesame seed oil to large pan. Stir fry the chicken (coated with potato startch) and green onions until cooked through.
  5. Cook the soba noodles according to the directions. Heat the broth.
  6. Serve in this order:
    • Noodles
    • Chicken / green onion mixture
    • Broth
