Eggplant Jajamen

Ingredients

360g yakisoba noodles
160g ground pork
100g eggplant
1/2 cucumber
(A) 160cc water
(A) 1 osaji tenmenjan
(A) 2 osaji cooking sake
(A) 4 kosaji soy sauce
(A) 2 kosaji sugar
(A) 2 kosaji katakuriko potato starch
(A) 4cm grated garlic
(A) salt

Steps

  1. Cut the cucumber into thin strips.
  2. Chop the eggplant.
  3. Mix (A).
  4. Microwave the yakisoba noodles at 500W for 1 minute and loosen them. Serve the noodles in big bowls.
  5. Add ground pork and eggplant to a frying pan and place over medium heat.
  6. Once the meat has changed color, add (A).
  7. Once it it has thickened, add the mixture over the noodles and garnish with the cucumber.
