Ingredients
2 chicken breasts (600g)
100g (1 ball) mozzarella cheese
1 can cut tomatoes
2 cloves garlic, pressed
2+ branches fresh rosemary
2 teaspoon dried oregano
salt
black pepper
olive oil
Steps
- Cut the chicken into bite-sized pieces.
- Add olive oil, rosemary, and pressed garlic to a frying pan and heat over low heat.
- When the garlic and rosemary become fragrant, add the chicken breast and stir fry it until the surfaces are browned.
- Add the can of cut tomatoes, salt and pepper and simmer over a medium heat for 10-15 minutes.
- About 3 minutes before it is done, add sliced mozzarella cheese and let it melt.
- Serve with rice, a side vegetable, and some fruit.
