Soba with Tomato & Shiso

Ingredients

2 packs soba noodles
2 tomatoes
2 pieces myoga
4 shiso leaves
(A) 100cc water
(A) 2 osaji soy sauce
(A) 2 osaji mirin
(A) 1 osaji white soup stock
(A) 3cm tubed ginger

Steps

  1. Prepare (A).
  2. Dice tomatoes. Cut myoga into small pieces. Cut shiso leaves into thin strips. Put all ingredients in a large bowl.
  3. Microwave (A) with no covering for 30 seconds. Remove and add ice.
  4. Cook soba noodles. Pour noodles into a strainer, and then return noodles to the pot. Add cold water and ice and stir around until the noodles are cool.
  5. Add noodles (extracting from the ice water) to the large bowl and mix in thoroughly.
  6. Add (A) to the large bowl and mix in.
  7. Serve in two large bowls.
