Miso Soup with Cherry Tomatoes

Ingredients

8 cherry tomatoes
1/4 onion
300cc dashi soup stock
1 tablespoon miso paste
3 shiso leaves

Steps

  1. Put tomatoes in a medium sized ziplock bag and put in the freezer until they are frozen.
  2. Slice the onion thinly.
  3. Prepare the dashi soup stock.
  4. Add the sliced onion to the soup stock and cook gently for awhile.
  5. Add the frozen cherry tomatoes and cook long enough for then to thaw out, but without overcooking.
  6. Dissolve the miso in the soup.
  7. Serve. Top with the shiso leaves. Makes 2 servings.
