Ingredients
2 packs soba noodles
1 pack of spinach
6 slices kamaboko
1 stalk nagageki green onion
揚げ玉
(A) 2 osaji cooking sake
(A) 4 osaji mirin
(B) 2 osaji soy sauce
(B) 2 osaji light soy sauce
2 kosaji hondashi Japanese soup stock base
420cc water
Shichimi pepper
Steps
- Chop the green onions into thin pieces.
- Chill the cold water by putting it in a stainless steel bowl and adding ice.
- Drop the spinach, uncut, in the boiling water very briefly. Transfer it to the ice water to shock it. Squeeze out the water and cut into 5 cm pieces. Set aside.
- In a small bowl, microwave (A) on 600W for 30 seconds. In a big glass bowl, add the microwaved (A), (B), and the hondashi soup stock base, and the water. Mix well.
- Prepare the stainless steel bowl again with ice water.
- Cook the soba according to the directions. Chill the soba in the ice water and serve in the two bowls. Add the broth. Top with the green onions, spinach, kamaboko , and 揚げ玉.
- Serve with the shichimi pepper, letting people add it by themselves.
