Eggplant & Okura

Ingredients

1 eggplant
4 okura
salad oil
(A) 2 osaji 2X concentrate mentsuyu
(A) 2-3 cm tubed ginger
dried bonito flakes

Steps

  1. Remove the stem from the eggplant and peel it with a striped design. Cut it into thirds, then into fourths lengthwise and soak it in water to remove the bitterness.
  2. Cut the okura into half diagnally.
  3. Add the drained eggplant and salad oil to a bowl and mix well. Add in the okura.
  4. Cover loosely with plastic wrap and microwave on 600W for 3 minutes.
  5. Remove from microwave and cool in freezer for 10-15 minutes.
  6. Sir in (A).
  7. Serve, topped with bonito flakes.
