Ingredients
1 eggplant
4 okura
salad oil
(A) 2 osaji 2X concentrate mentsuyu
(A) 2-3 cm tubed ginger
dried bonito flakes
Steps
- Remove the stem from the eggplant and peel it with a striped design. Cut it into thirds, then into fourths lengthwise and soak it in water to remove the bitterness.
- Cut the okura into half diagnally.
- Add the drained eggplant and salad oil to a bowl and mix well. Add in the okura.
- Cover loosely with plastic wrap and microwave on 600W for 3 minutes.
- Remove from microwave and cool in freezer for 10-15 minutes.
- Sir in (A).
- Serve, topped with bonito flakes.
