Curry Soba

Ingredients

2 packs soba noodles
200g koma giri pork
1 stalk naga negi green onion, chopped fine
50g curry roux (typically 1/4 of a box)
(A) 2 osaji 4X strength hontsuyu noodle soup
(A) 2 kosaji hondashi crystals
(B) 1 osaji katakuriko potato starch
(B) 1 osaji water
一味唐辛子 red chili powder

Steps

  1. Bring 600cc of water to a boil in blue pot and add (A) and the pork. Stir in the pork and cook for about 1 minuteoil over medium heat. Add the curry roux and stir in until it is dissolved.
  2. Add the green onions and potato starch and stir until the mixture thickens. Continue cooking for 30 seconds.
  3. Boil the soba noodles in the large steel pot according to the package directions. Drain and serve the noodles in two large bowls.
  4. Pour the roux mixture evenly over the two bowls of noodles and serve.
  5. Garnish with the red chili power, to taste.
