Chopped Salad

Ingredients

2 tablespoons extra-virgin olive oil

2 tablespoons red-wine vinegar

1 teaspoon Dijon mustard

½ teaspoon salt

½ teaspoon ground pepper

1 medium cucumber, diced

1 pound ripe tomatoes, diced

⅓ cup diced red onion

⅓ cup sliced black olives

¼ cup chopped fresh parsley

Feta cheese (optional)

Steps

Whisk oil, vinegar, mustard, salt and pepper in a large bowl. Add cucumber, tomatoes, onion, olives and parsley and toss to coat. Serve sprinkled with feta, if desired.
