A colorful Okinawan-style taco rice built around Siete Mild Taco Seasoning: hot rice and savory beef, lightly softened cheese, cool crisp lettuce and tomato, chunky salsa, and a creamy onsen tamago on top. The rice stays moderate so the bowl feels satisfying and protein-forward without becoming heavy.
Ingredients
500g Ground beef
1 packet Siete Mild Taco Seasoning
800cc Water
1 kosaji Salad oil
180g Lettuce, finely shredded
300g (2 medium) Tomatoes, diced
90g Cheese, shredded
4 Onsen tamago
8 osaji salsa
Lime wedges
Hot sauce
Preparation
• Shred the lettuce fairly finely and keep it cold.
• Dice the tomatoes into roughly 1–1.5cm pieces. If very juicy, let them drain briefly.
• Have the cheese, salsa, and onsen tamago ready before cooking the beef.
• Cook or reheat the rice so it is hot when the taco meat is finished.
Steps
1. Heat the pan. Set a large frying pan over medium-high heat. Add 1 kosaji neutral oil only if your beef and pan need it.
2. Brown the beef. Add 500g ground beef and spread it out. Leave it mostly undisturbed for 60–90 seconds, then break it into small crumbles. Cook about 5–7 minutes, until no pink remains, most moisture has cooked away, and several areas are genuinely browned.
3. Handle excess fat. If a large pool of rendered fat collects, tilt the pan and spoon off some. Leave a little behind for flavor and moisture.
4. Season with Siete. Sprinkle in the entire 37g Siete seasoning packet and add 80ml water. Stir thoroughly.
5. Simmer briefly. Reduce to medium-low and simmer 2–3 minutes, stirring often, until the liquid has mostly disappeared and the meat is moist and strongly seasoned but not soupy. Do not add ketchup, Worcestershire, extra cumin, or extra garlic.
6. Assemble immediately. Divide hot rice among four bowls. Add hot taco meat, then cheese so it softens slightly. Top generously with cold lettuce and tomato, spoon over about 2 osaji salsa per bowl, and finish with one onsen tamago.
7. Serve. Bring extra salsa, lime, and hot sauce to the table. Give Hayuma a larger share of rice and/or meat rather than enlarging every portion.
