Chicken Nanban Soba

Ingredients

2 packs soba noodles
200g chicken thigh (momo)
1 naga negi green onion
2 shitake mushrooms
salad oil
(A) 600cc water
(A) 3 osaji soy sauce
(A) 2 osaji mirin
(A) 2 kosaji sugar
(A) 1 kosaji hondashi

Steps

  1. Cut green onions into 3cm pieces.
  2. Thinly slice the shitake mushrooms.
  3. Cut chicken into bite-sized pieces. Sprinkle with salt.
  4. Prepare (A).
  5. Add some oil to the blue pot. Stir fry the chicken for 2-3 minutes until browned.
  6. Move chicken to one size, and sauté the green onions and mushrooms.
  7. Add (A) to pot. Bring to a gentle boil and cood for about 2 minutes.
  8. Cook noodles according to package directions and serve in bowls.
  9. Reheat broth mixture and serve over noodles.
